Cheesy Chili Mac

A smoky chipotle and beef chili folded into elbow macaroni coated in a custard-style sauce of evaporated milk, egg, American cheese and sharp cheddar, then blistered under the grill. The starch-dusted cheese stays smooth instead of splitting.
