Quick Pickled Vegetables

Cabbage, cauliflower, carrot, daikon and peppers simmered briefly in a sweet, turmeric-gold brine and chilled until crisp. They are tangy, a little spicy, and ready within hours. The leftover brine makes a good salad dressing.
