Chikuzen-ni Chicken and Vegetable Simmer

The Fukuoka home classic: chicken thigh, burdock, carrot, bamboo shoot, shiitake and konnyaku stir-fried in a film of oil, then simmered under a drop-lid in a small amount of strongly seasoned dashi until glazed. Keeps and reheats well.
