Shirazu-ae Tangy White Salad

Soy-glazed shiitake, salt-wilted cucumber, and carrot and konnyaku simmered in seasoned dashi, each prepared so its flavour runs deep, then tossed at the last moment in a creamy, slightly sour dressing of sieved tofu and sesame.
