Lemon-Shallot Mayonnaise

Hand-whisked mayonnaise in which the shallot is first steeped in lemon juice and salt so it softens and flavours the acid; one yolk carries a full cup of oil, with cayenne for a quiet warmth. Superb with asparagus or cold poached fish.
