Karei Nitsuke Saké-Simmered Flounder
Whole flounder cooked fast under a drop-lid in a flamed saké and mirin broth with two soy sauces. High heat and a short time keep the flesh soft and seasoned right to the bone; the chilled broth sets into a savoury jelly.
