Chai Patte Waali Chana Tea-Simmered Chickpeas
A northeast Indian chickpea curry simmered in strong Darjeeling tea, which lends colour, aroma and a gentle tannic bitterness, over a quick sizzle of cumin, ginger, garlic and green chile; lime brightens it at the end.
