Bifstek Enchorizado (Chopped Steak with Achiote)
Thin steaks rubbed with achiote paste and sour orange, charred briefly over fire, chopped, then finished in a soft tomato, onion and green pepper base. A smoky, brick-red Yucatecan home dish that is lovely with white rice and beans.
