Lal Mirch Lasoon Red Chile-Garlic Chutney

A fierce orange-red chaat chutney of soaked dried red chiles pureed with raw garlic, shallot, a pinch of sugar and salt. The shallot and sugar round off the burn just enough to layer it under yogurt and tamarind sauces.
